a great weekend


Hey all! It's a good thing that my New Year's resolution wasn't to blog more. It's not that I've had nothing to write about, but I've been wanting to update the "look" of the blog for a while now, and I didn't feel like posting until I could do that.

Well, now that I'm on break the updates are starting and the writing is back!

The past weekend was a blast. Katie and Jordan (recently engaged!) came to visit, which was a great way to relax after Friday's finals wrapped up. K & I tried our best showing them the sights down here, and we all got a chance to try out some new places to eat. Those two had a heck of a time trying to get home when the snow came down in that terrible state (for driving) on Sunday, but that gave us an extra time to take them more fun places on Sunday. Thankfully, they eventually got home safely after trekking through that tundra!

Monday we had a relaxing day spending the afternoon with the family. When we got back, Kelly hung a new picture on the wall (all by herself! see picture on left), and we wrapped up the night by watching our second Netflix.

Today, Kelly is at work, and I get to be the stay-at-home-husband. Breaks are such a blessing. Any ideas for dinner?

Ideas for dinner.... Straight from the ol' Journal Sentinel "Bow Tie Pasta with Winter Squash and Walnuts." Let me know if this recipe intrigues you. It sure grabbed me by the lapel.

What is the recipe?

It serves 6 and you may want to cut this recipe in half.

1 pound of winter squash (such as butternut, acorn or kabocha) peeled, seeded and cubed

1 lbs of bow tie pasta
1 tablespoon extra virgin olive oil
2 cloves minced garlc
3 tablespoons minced fresh parsley
2 tablespoons chopped walnuts
1/4 cup grated Parmesan cheese
(salt and peppered to taste)

Microwave cubed squash with a little water for 5-6 mins or until almost tender, let stand covered for 3 min. Drain and mash.
Meanwhile, cook pasta.
In a large non stick skillet, heat oil over medium heat. Add garlic and cook for 30 seconds. Add mashed squash, parsley and salt and pepper to taste. Toss drained pasta with squash mixture and serve topped with walnuts and Parmesan.

And that is dinner.

-What were your thoughts on Casino Royale? Maybe my expectations were up too high--it wasn't as good as I had hoped.
-I just sent back The Longest Yard. It was a good remake.
-Good job, Kelly on hanging the picture. What's it a picture of? I can't tell from the photo.
-Luke is such a cute teddy bear. It's so ironic you named him my favorite boy name!
-It took me a hole 24 hours to figure out that the dollar bill had Ted Drews inside it. Very clever.
-well, enough random thoughts for one post...I'm off to eat tortellini ...super easy recipe...boil 10 minutes; dump on ragu/prego sauce. Enjoy. =)

Thanks for the recipe, J! I'll try that as soon as I can get my hands on a squash.

mel - I can deinitely relate with your blogging woes. The blog ideas really come in spurts. Sometimes I'm like "oh! I've got to blog that" every other day, and then I go weeks without inspiration. Don't lose hope yet! I'm sure new inspiration is on its way ... and if it makes you feel better, you are a MUCH better blogger than Justin.

I thought Casino Royale was good, but different from what I was expecting. There was definitely a lot of thinking involved! I didn't know that you had seen it. Was that a Netflix for you?

-nope. I rented Casino Royale back when it first was released on DVD...when movie gallery was still open.
